Learn how to choose cashew nuts in Pakistan: whole vs broken kaju, raw vs roasted, nutrition, cooking ideas, freshness checks and smart storage.
Cashew nuts in Pakistan are enjoyed as a snack, served to guests and used in mithai, curries and festive gift boxes. Known locally as kaju, cashews have a naturally creamy taste and a soft crunch that works in both sweet and savoury food. But a good purchase involves more than choosing the largest nut or the most expensive packet. This guide explains grades, processing, nutrition, freshness, storage and the questions to ask before buying.
Start with the basics: clean kernels, a pleasant mild aroma, consistent texture and a sealed pack. Fresh cashews are usually pale ivory to light cream, although natural colour varies. They should not smell sour, musty or like old cooking oil. A few broken pieces do not make a pack unsafe, but a high proportion of fragments should be reflected in the price. Avoid any product with visible mold, insects or signs of dampness.
Quality depends on processing and storage after harvest as much as it does on appearance. Cashews grow attached to a cashew apple and must undergo specialized processing to remove their shells safely. Do not attempt to shell raw-in-shell cashews at home: the shell contains irritating compounds. Retail cashew kernels sold as “raw” have already been processed to make them edible; “raw” generally describes an unroasted culinary kernel, not an untouched nut.
Whole cashew kernels usually cost more because they look attractive in serving bowls and gifting assortments. Pieces can be a sensible choice for kheer, halwa, kaju paste, curry sauces and baking. If you plan to grind the nuts, paying extra for perfectly whole kernels may offer little practical benefit. For a luxury gift, however, uniform whole pieces create a polished presentation.
Ask whether the listed weight refers to edible kernels, and compare similar grades. One seller's “premium” label may mean large kernels, while another uses it for freshness or packaging. Looking at the actual product photographs and specification details is more informative than relying on the adjective alone.
Unroasted cashew kernels have a gentle buttery flavor. Roasting intensifies aroma and makes the texture crisper. Dry roasting does not require added oil, although some commercial roasted nuts are prepared with oil or seasoning. Salted kaju can be delicious with tea, but check the ingredients and sodium information if that matters to your household.
For a simple homemade roast, spread edible kernels in one thin layer on a baking tray, use moderate oven heat, turn them occasionally and take them out once lightly golden and fragrant. Timing varies by oven and kernel size, so monitor closely rather than relying on a fixed minute count. Allow them to cool before sealing: trapped steam can soften them. See our guide to roasting dry fruits at home for more techniques.
Cashews supply energy, unsaturated fats, plant protein and minerals including magnesium and copper. They are also calorie-dense, so a modest handful is often more practical than eating directly from a large open packet. The exact nutrition varies with preparation and portion. For verified composition and comparisons, consult the USDA FoodData Central database and the package's nutrition label.
Cashews cannot prevent, cure or treat a medical condition, and no single nut guarantees weight loss or better health. What matters most is an overall varied diet. People with tree-nut allergies should avoid cashews and check for cross-contact statements. For children, finely chopped cashews or nut butter may be more appropriate than whole nuts because whole nuts can present a choking hazard to younger children.
Prices change with crop, import costs, grade, size and retailer. Instead of repeating a price figure that may soon be outdated, calculate the value of the pack you are actually considering. Divide the total pack price by its weight in grams and multiply by 1,000 to estimate the cost per kilogram. Then compare the same grade and preparation: salted roasted pieces should not be treated as directly equivalent to large unroasted whole kernels.
For example, if one packet contains 250 grams and another contains 500 grams, compare their price per 100 grams, freshness, packing date and how quickly you can finish them. A smaller sealed bag can offer better value for an occasional buyer even if its unit price is slightly higher, because unused cashews can turn stale. The Pakistan dry-fruit price guide explains further factors affecting market prices.
Tea-time mix: combine a modest amount of cashews with unsalted almonds and a few raisins. This provides contrasting textures without needing sweet coatings. Breakfast: chop kaju over oats, yogurt or porridge, where the creamy texture works particularly well with banana. Desserts: add chopped cashews to kheer, zarda, homemade barfi or sheer khurma. Savoury food: blend soaked edible kernels into sauces for a creamy result, or scatter lightly toasted pieces over rice dishes. Gift trays: pair whole cashews with pistachios and walnuts for colour contrast.
For people who prefer a softer texture, cashews may be soaked in potable water in the refrigerator, then drained and used promptly in recipes. Soaking is a culinary option rather than a required step to make purchased edible cashew kernels safe. Discard soaking water and keep utensils and preparation surfaces clean.
Heat, air, sunlight and moisture can gradually damage nuts' natural oils. Transfer opened packs into clean, dry airtight containers. Keep small quantities in a cool cupboard only when the room stays suitably cool; in hot or humid conditions, refrigeration is often a better choice for maintaining quality. For longer storage, freeze tightly sealed nuts in moisture-resistant packaging and let the closed pack come to room temperature before opening to limit condensation.
Write the purchase or opening date on the container and use older packs first. If kaju develops a harsh, stale or paint-like smell, has mold or shows insect damage, throw it away rather than attempting to mask the smell by roasting. Our dry-fruit storage guide covers the same principles for almonds, walnuts and dried fruit.

Check the live page for current sizes, ingredients, price and availability rather than assuming they remain unchanged. If you are preparing a gift, see dry fruit gift box options; whole kaju combines neatly with almonds and pistachios. Good buying decisions prioritize freshness, suitability and transparent pack details over exaggerated health promises.
Edible cashew kernels sold as raw have already been processed to remove the dangerous shell and are generally intended for culinary use. Never attempt to open unprocessed cashew shells at home.
Whole kaju looks better in gift boxes and for garnishing; broken kernels are often a sensible option for cooking, pastes and desserts.
Keep them airtight, dry and away from heat and light. Refrigeration or freezing can help preserve quality in hot or humid conditions.
Both can fit into a balanced diet. Check whether roasting adds oil, salt or flavorings, and choose the preparation that suits your taste and dietary needs.
